DELIGHTFUL!

~1.5 cups EVOO
~1 Tablespoon garlic, minced
1 L and 1 M boneless, skinless chicken breast
1 16oz bag veg med
Cube the chicken.
Season as appropriate (I used garlic pepper, kosher salt, and a premade Italian seasoning)
Cook the pasta in big (I mean big) pot.
Sweat the garlic in about half the oil.
Add the chicken, and heat thoroughly, about 15-20 minutes on med-low.
-Yes, this is a long time to cook chicken, especially in oil. Let it simmer in the oil a while to get flavorful and absorb most of the garlic from the oil. Add rest of oil slowly to keep relatively even heating throughout.
Cook veg med (your call)
Drain pasta.
Add chicken-oil-garlic mix directly.
Drain veg med and add to mixture, mixing all together.
ENJOY! (Feeds about 6-8)
