I only made two spuds' worth today. Next time, I'll whip up an 8 spud batch and you and a swishy-fox and a quick-spotty kitten can delight in them with me. ;)
It's an older recipe that I posted when I first moved up here.
-Clean and peel a couple of average (palm sized potatoes) -Grate each one over a typical cheese grater -Wash the gratingsto remove excess starch -Add about 1/4 cup of apple cider vinegar, mixing them thoroughly (this is both for a dash of flavor and for scent; not to overpower the potato flavor) -Heat in a skillet about 2 tablespoons of olive oil -Add potatoes to oil, making a pancake like item -When browned on first side, drizzle same oil amount over uncooked side and flip -Continue flipping cake until well browned on both sides
