Quesadilla:
Heat a tortilla on a non stick pan, about medium-high heat.
Sprinkle very lightly the top of the tortilla with cinnamon and garlic powders.
Use roughly equal parts of shredded sharp cheddar and monty jack cheese; just to cover the surface.
Set second tortilla over cheese.
When mostly melted, flip, until cheese is completely melted.
Serve in pieces.
